The grapes manually harvested and softly pressed yield a must that ferments in stainless steel at a low temperature.

Maturazione

In spring, the bottles ferment at low temperature for 4 weeks. The wine matures on the refermentation lees for 24 months. Dégorgement à la glace.

Tasting notes

Straw yellow bubble with fine, persistent perlage. Delicate hints of white flowers, dried fruit and bread crust on the nose. In the mouth it is fine, elegant and balanced with notes of yeast and delicate citrus fruits.

Food pairings

Aperitifs and especially fish appetizers, structured first courses and delicate main courses.. Serve at 4-6°C
