Tasting notes

The nose is characterized by herbaceous, fruity and floral notes: star anise, juniper, candied fruit, apricots and honey. An intense wine, but also fresh and savory.

Food pairings

Very flavorful fish dishes, spicy meats, lamb or kid, braised and roasted meats, classic soups of the Mediterranean diet or typical Asian dishes, such as a vegetable tempura. Serving temperature 10-12°C.

ORANGE WINE

Vinification

The grapes arrive at the winery where they are destemmed and crushed. The crushed grapes are immediately cooled in tanks where pre-fermentation maceration takes place at a low temperature (about 10°C). The fermentation process then takes place at 15-18°C, in stainless steel tanks with a temperature control system for 30 days. Trebbiano and Pinot blanc are vinified separately. Towards the end of fermentation, the wine is racked and pressed. The wine then undergoes aging for about 3-6 months on noble lees.

The estate vineyards are located in the Bidente Valley at 120 meters above sea level, medium-textured soil.
