The grapes arrive at the winery and are softly pressed, the must ferments in steel at low temperature. Pulling takes place in spring, and the bottles ferment at low temperature for 4 weeks. After refermentation in the bottle, the wine matures on the lees for 24 months. Disgorgement à la glace.
The vineyards are located in the hills of Romagna, in areas chosen for their soil rich in mature calcareous clays.
